5 Vegetarian Meal Prep Ideas for College Kids

A person can only survive on dining hall tater tots for so long*. I'm lucky to go to school near where my sister lives, and I was overjoyed the day she surprised me with several Tupperware bins full of home-cooked meals. Since then, she's been kind enough to help me prep meals for the week any time I see her. 

These recipes are all vegetarian, packed with nutrients from simple ingredients, and good reheated in portions in a microwave for at least a week. They've helped me stay happy and well-fed while I'm at school.

The first two are the ones my sister first surprised me with. She didn't record the exact recipe, so treat these as a starting point, inspiration, rather than an actual recipe. 
I hadn't planned to post about any of these, so the photos, if there are any, were taken for the vibes and memories rather than for the foodstyling. In other words, if the food looks ugly, I promise it doesn't taste ugly, and if there aren't pictures, I promise it was still a memorable dish.

Sweet Potato and Black Bean Bowl
Cubed sweet potato tossed with a sweet, pico-like mix of black beans, corn, diced tomato, and cilantro. Each serving topped with a generous dollop of sour cream.

Cheesy Couscous
Couscous, eggplant, and zucchini mixed with hunks of feta cheese. I had never tried couscous with cheese before. It was mind-blowing.


Sweet Potato Green Rice Burrito Bowl

I love any Cookie and Kate recipe! The rice is made green by a puree of herbs and veggies. I topped each serving with avocado and roasted pumpkin seeds.

Lentil Shepherd's Pie
Super easy to make, full of so much goodness. The recipe is vegan but I added butter to the mashed potatoes and topped each serving with cheese after heating it.

Lentil Bolognese
Had lentils leftover from the previous recipe, so this was fun to try! I topped it with provolone from the Dining Hall sandwich bar. The lady who serves there thinks it's really funny that sometimes I just ask for cheese. She calls me "Cheese Mama."
