How to Make an Omelette in a Mug: New Recipe Video!

In high school my Friday morning tradition was to make a "mug omelette" with eggs, black beans, Parmesan cheese and whatever leftover veggies we had from the night before. Like a regular omelette, you can really put whatever you want in this, which explains why my standard recipe changed in between writing it down for the cookbook and filming the video, then again between filming and posting the video (nearly a year after filming).
