Exam-Day Breakfast: Savory Oats Recipe!

Throughout a week of AP exams and practice exams, I've found these oats to be just right to prepare me for a day of testing! I don't have a picture of it, so here's a drawing of it I made in my internship notebook.

This savory oatmeal charges you up without upsetting your stomach so you're totally set for long exams.
I thought this was one of those foods that was only appealing to me but other people think is gross, like undercooked potatoes (I can't believe I'm admitting that on the internet). On the contrary, the other day when I was eating it someone said, "wow, that looks good" and made my day. So now you can decide for yourself.

Exam Day Oats
1/2 cup old fashioned oatmeal
1 cup water
Dash of pepper
Dash of salt, if your oil isn't salty
1 tbsp oil/fat (olive oil, butter, etc. I like to use sesame oil)
2 eggs
1/2 cup spinach

Combine oatmeal, water, pepper, and salt in a bowl. Microwave per instructions on oatmeal container, stirring intermittently.

Heat oil in a nonstick pan over medium low heat. Add spinach to pan and saute it for a few minutes. Then, crack both eggs into the pan. Fry until spinach is entirely dark, and eggs are mostly cooked (a little bit of a soft yolk is good).  Add spinach and eggs over top of oatmeal.

If you try it, let  me know if you like it or if it's one of those things that only I think is good. You can let me know in the comments below, by email, on Facebook, or on Instagram. And good luck on your exams, kiddos.

World peace and love,
