The Blergh Lunchbox: Burrito Jar

I hereby declare this to be the inaugural post of the series:  Fun, Nutritious, Vegetarian School Lunches Anyone Can Throw Together in Ten Minutes or Less.


I love school as much as the next bookworm, but I don't think there's any one of us that doesn't wish, just a little bit, that it was still summer.  Don't get me wrong!  As soon as it hit September 22, I was all over that apple-cinnamon, cozy sweater fall aesthetic.  Still, as I freeze to oblivion in a classroom, I can't help but miss warm days spent at the beach.  This burrito jar lets you bring tropical sunshine with you to school, work, or just at home.

It's super easy: layer rice, black beans, greens, avocado and/or tropical fruit in a jar.  Sprinkle lime juice over top.  Depending on your taste and the size of your jar, you could also add corn, sour cream, salsa, etc.  And you could exchange rice for quinoa, if you're into that kind of thing.  Don't forget to pack an ice pack with the jar to keep everything chill.


Granted, rice(/quinoa/whatever grain you want) usually takes longer than ten minutes to make, especially since this jar needs cold rice.  I normally make the rice the night before, or I make the jar when we have leftover rice in the house.

Note: This was not the only thing I ate for lunch!  This was just the part of my lunch I deemed Pinterestable, haha.  I need more calories than this and most other people do, too.  Everyone's body is different, so listen to yours and make sure you're taking care of yourself, please. :)
